Chef Journey

Chef Elliot Fabri

Where I trained

Raised in my grandmother's Italian kitchen, then taught by masters in Japan, Bali and Thailand. Every menu I cook carries something from each of them.

Cuisine designed to awaken, nourish, and revitalize.

At its heart, Roots Alchemy is a love letter to the earth, a sacred culinary expression rooted in the alchemical power of food prepared with presence, love, and intention.

We draw inspiration from global culinary traditions and reimagine them through the lens of nourishment, intention, and flavor alchemy.

We honor timeless techniques while crafting bold, vibrant creations that speak to the soul and fuel the body with vitality.

Our mission goes beyond food—we design our cuisine with reverence for the land and love for our community. We compost, recycle, utilize bioplastics, and grow ingredients in our evolving permaculture garden.

Founded by Elliot Fabri, Roots Alchemy is the expression of years spent cooking in sacred settings and intentional communities across the globe — from regenerative farms in Hawai'i to kitchens in Bali, Thailand, and Japan, and retreats in Costa Rica, California, New York, and Mexico.

Our Culinary Philosophy

We carefully source organic, seasonal ingredients from regenerative farms and local suppliers who share our commitment to regeneration, and earth stewardship.

Our meals are crafted from scratch with whole food ingredients, no shortcuts, no compromises, just real food, prepared with love—always free from refined sugars, seed oils, artificial dyes, preservatives, and chemical additives. We select ingredients that are alive with color, flavor, prana, and nutrition.

Many of our offerings are raw or gently heated to preserve their nutritional integrity, honoring traditional techniques and modern science. By preparing everything fresh and by hand, we ensure that each bite carries the essence of real nourishment—from the soil to the soul.

Founder Story

Roots Alchemy was born from a journey that spans generations, continents. It is a sacred culinary expression of cuisine as a form of medicine, ceremony, and connection. Every plate is a harmonious composition of diverse flavors, healing ingredients, and artistic presentation.

Founder Elliot Fabri was raised in the heart of his grandmother's Italian restaurant, surrounded by the aromas of simmering sauces, hand-rolled pasta, and old-world hospitality. With Italian and Polish heritage as his culinary foundation, his passion for food ignited early—and only grew stronger as he traveled across Europe, Asia, Latin and South America, tasting and learning from diverse cultures along the way.
