A kaiseki-style tasting: small seasonal plates in a set order, each one built around what the island farms and boats have that week.

Kona · Kohala Coast · Waimea
Nigiri, simmered and seasonal small plates and a course-by-course kaiseki-style evening, cooked in your kitchen by Chef Elliot Fabri, who trained in Japanese kitchens in Tokyo.

A kaiseki-style tasting: small seasonal plates in a set order, each one built around what the island farms and boats have that week.

Hand-formed nigiri and rolls with local fish, or a plant-based set of vegetable nigiri, so every guest has a full sushi course.

For families and longer stays: dashi, simmered dishes, noodles and greens, the everyday Japanese food that is hard to find on the island.
“Fantastic food. Great thought put into each dish. Loved the presentation, taste, and experience. The enthusiasm and appreciation for culinary arts shines through in each bite.”
“An excellent experience to learn how to cook sushi… a very special class to cook… as we enjoy flavores from Japan.”
“It was a really fun activity to do together… Everything was fresh and very thoughtful from a food safety perspective (I have my masters in public health)… and delicious!”
